Acetaia Bonini is an artisanal vinegar producer based in Vignola, just a stone’s throw from Modena, where we craft Traditional Balsamic Vinegar of Modena PDO with passion and dedication.
In a world increasingly driven by speed, we preserve the art of slowness: every drop of our products is the result of a natural process of fermentation and aging that lasts for years, sometimes even decades, in batteries of barrels made from different types of wood.
Our products, appreciated by renowned chefs in Italy and around the world, are made exclusively from cooked grape must, with no added additives or preservatives, following methods passed down through generations. Every stage of production reflects our com-mitment to quality, authenticity, and respect for tradition.
