AI Bobby: Neural AI for Protein Producers For more than 20 years and over $20B of R&D, the food industry has barely replaced 1% of animal proteins – it still hasn’t even managed to replace gelatine in something as simple as a gummy bear. AI Bobby builds a neural AI “brain” dedicated to developing and improving protein functionalities – gelation, water-holding, emulsification, foaming and more.
